Savory Southern Cornbread

Ingredients: 

  • 1 cup yellow cornmeal

  • 1 cup AP flour

  • 2 tsp baking powder

  • ¼ tsp baking soda

  • 1 tsp kosher salt

  • 1 ½ cups buttermilk

  • 2 eggs

  • 4 TBSP butter

Directions: 

  1. Preheat oven to 375°F. Melt butter in a 9-10 inch cast iron skillet over medium-low heat. 

  2. Place dry ingredients in a large bowl and whisk to combine. 

  3. Make a well in the center and add eggs. Beat lightly with a fork or whisk.

  4. Add buttermilk and melted butter, and stir to combine (return the skillet to medium-low heat while you stir).

  5. Pour batter into hot skillet (it should sizzle).

  6. Bake until golden-brown and a toothpick inserted into the center comes out clean, 20-25 minutes.

  7. Allow to cool in the skillet 10 minutes, then transfer to a wire rack to cool completely. Once cool, cut into slices.
