Blood Orange-Rosemary Spritz

Bright, citrusy, a little herbal, lightly fizzy, this is the kind of holiday spritz that feels festive without being heavy. Blood orange brings the color pop, rosemary adds a savory edge, and prosecco ties it all together with bubbles. It’s simple to assemble but feels like a real “hostess moment.” The base is super versatile and can be repurposed into a million different cocktails, from whiskey sours to margaritas. In this case we’re going the spritz route which is light but festive enough for Christmas morning.
Ingredients:
Rosemary Simple Syrup
1 cup sugar
1 cup water
4 rosemary sprigs
For the Base:
2 cups fresh blood orange juice (about 6-8 oranges)
1 cup orange liqueur
½ cup rosemary simple syrup (recipe below)
For Assembly:
1 bottle (750 ml) prosecco, chilled
1 cup soda water, chilled
Ice
2-3 blood oranges, sliced into wheels, for garnish
Fresh rosemary sprigs, for garnish
Directions:
Rosemary Simple Syrup:
Combine sugar, water, and rosemary in a small pot and bring to a gentle simmer. Turn off heat and steep for 15 minutes. Strain and chill.
For the Base:
Combine blood orange juice, orange liqueur, and rosemary simple syrup in a pitcher and chill.
To Serve:
Fill a wine glass halfway with ice cubes. Add 3oz chilled base, then top with 3oz Prosecco and ½-1oz soda water. Garnish with a blood orange wheel and a rosemary sprig.
